Happy Friday! This week’s recipe is for summer pesto pasta. There is just something about the freshness of pesto that reminds me so much of summer. With tomatoes and basil being in season, now is the perfect time to whip up this summery, light, fresh dish that is guaranteed to be a crowd-pleaser.
In this particular recipe, we used lemon basil simply because our garden was overflowing with it! The lemon basil gives the pesto a lightness that contrasts well with the earthiness of the mushrooms. If you are having a difficult time finding lemon basil, regular basil will work just fine. And trust me, once you realize how easy it is to make your own pesto, you won’t ever go back to buying the store-bought, oily, jarred variety.
